Vermilion Rockfish
The vermilion rockfish (Sebastes miniatus) is also known as the red rock cod, red snapper, and vermilion seaperch. We find them on rock piles, in waters from 80 and deeper.
The vermilion rockfish is a bright red fish with black and gray mottling on its back and sides. It has a deep, compressed body, a curved head, and a large mouth. The fish can grow to 30 inches long and live up to 60 years.
The vermilion rockfish is native to the Pacific Ocean off western North America, from Baja California to Alaska. It is found near the bottom of the ocean over rocky substrate.
Its flaky white meat is easy to prepare and can be roasted, baked, batter fried, or steamed.
